Butterscotch Chip, Oatmeal, & Coconut Cookies
Ingredients:
· 2 eggs, well beaten
· ¾ cup brown sugar
· ¾ cup white sugar
· 1 cup vegetable oil
· 1 cup flour sifted with 1 tsp salt
· 2 cups oatmeal
· 1 cup coconut
· 6 oz. butterscotch chips (sometimes I use the whole bag)
Directions:
1) Mix all ingredients, then add up to 2 more cups oatmeal
2) Drop on ungreased cookie sheet and bake at 350 degrees for 10 minutes. Take out of oven. The cookies will not look done.

Thanks to you, I'm beginning to believe that thin is an over-rated virtue (unless one comes by it naturally as you do!)
